MRS ELSWOOD'S "THE FULL WORKS" BURGER

This is our biggest and best burger! Only for the true BBQ and pickle fans!
Serves 4

  • 500g steak mince

  • ½ red onion

  • A Splash Worcestershire sauce

  • ½ tsp celery salt

  • A Pinch chilli flakes

  • 4 brioche burger buns, toasted

  • 8 slices Swiss Cheese, lime Emmental

  • Mrs Elswood’s Burger Gherkins

  • Lettuce and tomato to serve

​The Mrs Elswood Secret Burger Sauce!

​

  • 4 tbsp Full fat Mayonnaise

  • 2 tbsp Tomato Ketchup

  • 2 tsp Mustard

  • 2 tsp Pickle juice

  • 10x Finely chopped Mrs Elswood Burger Gherkins

  • ¼ Finely chopped Red Onion

  • Freshly cracked Black Pepper & Sea Salt to taste

  • Make the burger sauce ahead of time, this sauce can be stored in the fridge overnight. In a mixing bowl, combine all the sauce ingredients together. Adjust the seasoning to your preference!​

​The Burgers:​​

  • Put the mince in a bowl. Grate the onion on the coarse side of a box grater (You may have to discard the tough outer layers). Add the grated onion to the mince bowl along with a splash of Worcestershire sauce, celery salt, and chilli flakes. Mix everything with your hands and divide into 8 equal portions.

  • Flatten each portion into a thin burger patty. You can use clean hands or the back of a spatula.

  • On a non-stick frying pan on high heat, cook the burgers for 2 minutes on each side. You may not be able to fit all at once, so transfer cooked patties onto an oven tray with a slice of cheese on top. When all have been cooked place the tray in the middle of an oven at 180C, so the cheese melts.

  • If you are using a BBQ, cook burger patties until they are cooked thoroughly and add a slice of cheese until it melts.

  • Put some sauce on each bun base. Add lettuce and a couple of slices of tomato. Stack up 2 patties with cheese, then add sauce, and gherkins. Add more sauce, the bun tops and skewer each to hold it together.
