  • 1 tbsp soy sauce

  • 60ml maple syrup

  • 2 tbsp bourbon

Coleslaw

  • 1/2 packed cup green cabbage (shredded)

  • 1/2 packed cup red cabbage (shredded)

  • 1/2 packed cup carrots (shredded)

  • 2 tbsp celery (thinly sliced)

  • 1/4 tsp sea salt

  • 1/8 tsp freshly ground pepper

  • 60ml mayonnaise

Sliders

  • 450g ground chuck

  • Salt and pepper to taste

  • Cooking oil as needed

  • 8 slider buns

Equipment & Utensils

  • Grill or grill pan

  • Small saucepan

  • Medium bowl

Preparation

Bourbon BBQ Sauce

  1. Pour BBQ sauce, soy sauce, maple syrup, and bourbon into a small saucepan and place over medium heat.

  2. Stir the ingredients while slowly heating.

  3. Slightly raise the temperature to allow the sauce to start boiling.

  4. Stir continuously until the sauce begins to reduce and thicken.

  5. Remove from heat and set aside to cool.

Coleslaw

  1. Place green cabbage, red cabbage, carrots, and celery into a bowl and mix together.

  2. Add salt and pepper, and mix once more.

  3. Add mayonnaise and mix thoroughly until all ingredients are well coated.

  4. Cover the bowl with cling film and store in the fridge.

Sliders

  1. Divide the ground chuck into 2oz portions and gently shape each portion into a burger patty.

  2. Ensure the center of each patty is slightly less dense than the outer edges by gently pressing down on the center with your fingers and thumbs, avoiding overworking the patty.

  3. Season the patties with salt and pepper to taste, then cook them to your preferred temperature.

  4. Set the slider patties aside, loosely covered with aluminum foil, to rest for 3-5 minutes.

  5. Grill the inside of the burger buns until they are warmed on the outside.

  6. Now you are ready to assemble the sliders.

  7. Spread 2 tsp of bourbon BBQ sauce on the inside of the bottom of each slider bun.

  8. Place the slider patties on top, then spread another tsp of bourbon BBQ sauce on the tops of each slider patty.

  9. Place equal portions of coleslaw on top of the slider patties and cover with the top part of the slider buns.

  10. Serve immediately, adding slices of Mrs Elswood’s Burger Pickles.
